Fluffy Golden Pancakes

Ingredients
1 1/2 cups self raising flour
1 teaspoon baking powder
2 tablespoons of caster sugar
pinch of salt
2 eggs lightly whisked
2 teaspoons of vanilla extract/essence
1 cup of milk
60g melted butter
Method
Step 1: Sift all of the dry ingredients (Flour, baking powder, caster sugar, salt) into a mixing bowl
Step 2: Mix together the eggs milk and butter in a jug and add it into the dry mixture. Stir until it forms a smooth consistency
Step 3: Leave the batter in the fridge or just aside for at least 20 minutes before cooking them
Step 4: Butter the pan and put around a 1/4 cup of batter onto the pan. Cook 1 minute on each side over a low fire

Step 5: Serve with whipped butter, maple syrup or a topping of your choice

Tip
If you wish to make mini pancakes put 1 teaspoon of batter on to the pan
